		<description>Hey Kathy!  Uni is sea urchin roe.  What made me balk before I tried it is that it's a rather sickly orange color, and the texture is, well, kinda slimy.  If it's fresh and in season (and you like that kind of super-seabed type flavor/smell that you get with say, fresh oysters), then it's worth a try.  

I'll nag Chopper about the lasagna recipe.  We have it around here somewhere and we haven't cooked it in ages because one of the main ingredients isn't available on the island.  :-(

Hey... I'm still waiting for Chopper's non-dairy lasagna recipe... we have to keep up the Christmas tradition, in spite of our new intolerances (has anyone else passed 40 and suddenly lost their ability to eat almost EVERYTHING?) I started using "turkey" italian sausage a couple of years ago (it's really not bad) when I had to give up pork, now I have to replace cheese too!</description>

Melissa -- I'm contemplating taking photos of the mold jungle and threatening to put them online.  I wonder if &lt;i&gt;that&lt;/i&gt; will do the trick?

Ana -- ditto on the occasional flights of fancy for me, but they have to be awfully small flights!  I seem to do fine with butter and harder cheeses, which helps.  The biggest problem I've run into is with whey &#38; casein.  I have to read the label of every pre-fab dib (Nalley's guacamole, etc) because those things almost always have milk proteins in them, even when you'd think they wouldn't need 'em, and milk protein additives make me sick as a dog!  BTW, Chopper created a recipe for a kick-ass non-dairy lasagna recently.  We'll be posting it soon...)</description>
