		<description>Hiya Karen! No worries on the chiles, all they really do is influence the amount of heat in the paste. But, to peel or not to peel, that is the curry paste question. I prefer to peel them (yes it's a huge P.I.T.A.) because it makes for a better consistancy IMO. Either way, I'm glad you tried it, and I'm glad you had fun with your mortar and pestle!
