As to the idea of sugar in the dough I make, which both you and Kevin alluded to, it's in there to make the dough retardable. I always end up with more than I need, and throwing it away would seem a waste. So, I add sugar to the recipe so that I can retard the dough for a while and have a turbo-charged food source for the yeast when it "wakes up" after I break the dough out again. Thak you Gracianne. Mine are very different though, thin crusted - Roma style - no sugar in the dough and cooked on a stone. One topped with tomatoes, mozzarella, ham and thyme, the other one tomatoes, mozzarella, thin slices of potatoes, sausage and rosemary. They were gone in no time.
