I know, I know. No cilantro in the pico. I did it mostly because two out of three people around me dislike cilantro, and I also feel that parsley has a more "green" flavor to it, while cilantro tastes more complex. I didn't want to hide the flavor of the pork, which was already competing with the rice, and the avocado.

To each his own, James.

Either works, and some folks (certain members of this household included) cannot eat cilantro.

... hold on ... eating jalapenos with lunch and just picked nose. Hooboy. Hey, that's not too bad, it's cold out and my sinuses just cleared up.

PORK & SODA !!!

Jeez you guys, what's next? Roasting a pork sirloin wrapped in foil tucked over an exhaust manifold in your truck?

Biggles

Hey Cyndi,

Chopper started with the pork in strips (see the photo just above the recipe), and after four hours in the pot it really didn't need more than a bit of poking with a fork to fall apart. I'd think this would work in a crockpot just fine. Chopper says it might take a couple extra hours but the flavor would be even better.

So was the pork then shredded after the pork roast cooked for several hours? Do you think this would work in a crockpot? Yum! gotta try it.

Hah! CC, Chopper, I kid you not, said "someone's gonna nail me for that ketchup."

I KNEW you were going to mention the HAT. In my defense (and it's a good one), our burrito project occured just prior to the arrival of the hat, so, in fact, there was no pink hat to be had!

I promise you, next photos of me with hat? The hat will be PINK.

Hahaha. Everyone's so concerned about the animals! :-)

Nope. None for the poochie. Seriously, it tasted far too good for us to share.

B'gina: yup, Mr. Pibb is (I believe) the Coca-Cola Co's rival product to Dr. Pepper (which is from the 7-up Co.) I like Dr. Pepper better, but since this was, in part, an homage to Lonely Island's Mr. Pibb bit (which I'd post a link to if I could find one), we had to stick with the Pibbster.

Burrito high. Huh, McA. I never thought about it that way, but you may be onto something...
